Barley and Corn Casserole

Ingredients

3.0 cloveGarlic
1.0 cupOnion
0.67 cupCarrot
1.0 TBSPOil
3.0 cupStock, Chicken
1.0 cupBarley, Pearl
0.25 tspsalt
0.125 lbPepper, Black
2.0 cupCorn
0.5 cupParsley

Instructions

  1. In a skillet over medium heat, saute the garlic, onion and carrots in oil
    until tender. Transfer to a greased 2-qt baking dishat add broth, barley,
    salt if desired and pepper. Mix well. Cover and bake at 350'F for 1 hour.
    Stir in corn and parsley. Cover and bake 10-15 minutes more or until the
    barley is tender and corn is heated through.
