| 0.25 cup | Pepper, Bell, diced |
| 2.0 TBSP | Oil, Olive |
| 0.33 cup | Pepper, Ancho, fine dice |
| 1.0 can | Tomatoes, Diced, 14-16 oz. with juice |
| 2.0 cup | Rice, White, cooked |
Saute the celery, onion, and peppers in the oil till tender.
Add the tomatoes and bring to a simmer
Add rice, mix, adjust seasoning, and allow to rest for 10 minutes.
