Escabeche

Ingredients

0.4 lbTomatoes, grape, sliced
0.2 lbCucumber, diced
0.18 lbOnion, Red, minced
0.18 lbPepper, Bell, yellor or orange, diced
1.0 eachMangos, diced
0.5 cupCilantro, minced
1.0 eachLemon, juice only
1.0 eachLime, Juice only
1.0 eachOranges, Juice only
0.5 eachPepper, Poblano Chile, fine dice

Instructions

  1. Slice the tomatoes sideways.

  2. Finely dice the bell pepper.

  3. Dice the remaining vegetables and the mango to a similar size.

  4. Mix all the ingredients in a bowl. Adjust seasoning with salt and sugar.Cover and chill.

    NOTE: The poblano chili is optional. Add more or less to your taste. I have a very low tolerance for chili and my recipes reflect that. This can be seasoned to your tastes.
