Sardinian Couscous

Ingredients

0.25 lbMushrooms, Crimini, sliced
0.25 lbMushrooms, Oyster, broken up
1.0 eachShallots, diced
0.25 cupWine, White
0.5 cupCream, Heavy
1.0 cupStock, Chicken
1.0 lbCouscous, cooked al dente

Instructions

  1. Slice the Crimini mushrooms

  2. Separate the oyster mushrooms

  3. Mince the shallots

  4. Saute the Crimini mushrooms in some butter, reserve. Saute the Oyster Mushrooms, reserve. Add the shallot and some more butter if needed to the same pan. Saute.

  5. Deglaze the pan with the white wine.

  6. Reduce till almost dry

  7. Return all mushrooms to the pan.

  8. Add the heavy cream and stock. Bring to a simmer.

  9. Stir in the couscous and sprinkle with some chopped fresh parsley.
