Poached Chicken

Ingredients

3.0 lbChicken Thighs, trimmed

Instructions

  1. Make the poaching oil, recipe below

  2. Season both sides with rub

  3. Place the chicken in a cooking vessel, and pour oil around, not over the chicken.

  4. Egg at at300 for an hour.

  5. Turn gently, and egg another hour at at 300

  6. Remove from pan

  7. Sprinkle with more rub, and place on grid indirect at 300 for 15 minutes

  8. Baste with sauce

  9. Egg another 15 minutes for sauce to set. You're done
