Couscous with Figs and mint

Ingredients

2.0 cupCouscous
0.25 cupOil, Olive
0.25 cupLemon Juice
1.0 TBSPHoney
0.5 cupFigs, dried, chopped
0.5 cupMint, chopped
0.25 cupPistachios

Instructions

  1. Bring 2 cups of water to a boil. Salt to taste and add couscous. Cook till tender.

  2. Combine remaining ingredients, chill and serve.
