Cherry Filling

Ingredients

4.0 lbCherries, frozen
150.0 gramwater
40.0 gramLemon Juice
200.0 gramSugar, plus more to taste
45.0 gramCorn Starch, sieved to prevent lumps
0.5 tspAlmond Extract
0.5 tspVanilla Extract

Instructions

  1. Mix the water, lemon juice, corn starch, and sugar in a 5 qt. pot until corn starch is dissolved (don't worry about the sugar).

  2. Add cherries and bring to a boil over medium heat stirring frequently. Reduce heat and simmer for 10 minutes, still stirring frequently.

  3. Remove from heat and stir in the extracts.
