Watermelon Tomato Gazpacho

Ingredients

2.0 lbTomatoes, Cut into chunks
1.0 lbwatermelon, Cubed
1.0 ribCelery, Peeled to remove strings and diced
2.0 eachShallots, Diced
1.0 tspChili powder
2.0 cloveGarlic, Minced
1.0 someBlack Pepper, ground, To taste
1.0 someSalt, Morton Kosher, To taste

Instructions

  1. Cut up the tomatoes and place in a large bowl food processor.

  2. Cut up the watermelon and add.

  3. Add the celery and onion. Process a bit.

  4. Add the garlic, chili powder, salt and pepper.

  5. Process until gazpacho reaches desired consistency and chill.
