Bechemal Sauce

Ingredients

1.0 cupButter
1.0 cupFlour, all-purpose
0.5 gallonMilk
1.0 somesalt, To taste.
1.0 somePepper, White, To taste.
1.0 someNutmeg, ground, To taste.
0.25 lbcheese, grated parmesan

Instructions

  1. Melt butter in sauce pan. Carefully allow to brown a bit.

  2. Stir in flour and allow to cook but not brown.

  3. Whisk in milk a cup or two at a time.

  4. Allow béchamel to come to very gentle boil while continuing to whisk.

  5. Add salt, pepper and nutmeg to taste.

  6. Whisk in Parmesan if using.
