| 1.0 cup | Butter |
| 1.0 cup | Flour, all-purpose |
| 0.5 gallon | Milk |
| 1.0 some | salt, To taste. |
| 1.0 some | Pepper, White, To taste. |
| 1.0 some | Nutmeg, ground, To taste. |
| 0.25 lb | cheese, grated parmesan |
Melt butter in sauce pan. Carefully allow to brown a bit.
Stir in flour and allow to cook but not brown.
Whisk in milk a cup or two at a time.
Allow béchamel to come to very gentle boil while continuing to whisk.
Add salt, pepper and nutmeg to taste.
Whisk in Parmesan if using.
