  • 3.0 tablespoonMirin
  • 3.0 tablespoonSake
  • 0.25 cupSugar
  • 0.5 cupMiso, white (shiro)

Whisk till all dissolved.

For salmon, dip portions into the marinade and place in a plastic bag. When all pieces have been coated, add remaining marinade. Seal and allow to marinate for at least 6 hours.
