  • 1.0 cupButter
  • 1.0 cupFlour, all-purpose
  • 0.5 gallonMilk
  • 1.0 somesalt
  • 1.0 somePepper, White
  • 1.0 someNutmeg, ground
  • 0.25 poundcheese, grated parmesan

Melt butter in sauce pan. Carefully allow to brown a bit.

Stir in flour and allow to cook but not brown.

Whisk in milk a cup or two at a time.

Allow béchamel to come to very gentle boil while continuing to whisk.

Add salt, pepper and nutmeg to taste.
