
| 1 | cup | Butter | |
| 1 | cup | Flour, All Purpose | |
| 1/2 | gallons | Milk | |
| 1 | some | Salt | To taste. |
| 1 | some | Pepper, White | To taste. |
| 1 | some | Nutmeg, Ground | To taste. |
| 1/4 | pound | Cheese, Grated Parmesan |
Melt butter in sauce pan. Carefully allow to brown a bit.
Stir in flour and allow to cook but not brown.

Whisk in milk a cup or two at a time.
Allow béchamel to come to very gentle boil while continuing to whisk.
Add salt, pepper and nutmeg to taste.

Whisk in Parmesan if using.
