Ingredients   

1cupButter 
1cupFlour, All Purpose
1/2gallonsMilk
1someSaltTo taste.
1somePepper, WhiteTo taste.
1someNutmeg, GroundTo taste.
1/4poundCheese, Grated Parmesan

Instructions

1. 

Melt butter in sauce pan. Carefully allow to brown a bit.

2. 

Stir in flour and allow to cook but not brown.

3. 

Whisk in milk a cup or two at a time.

4. 

Allow b├ęchamel to come to very gentle boil while continuing to whisk.

5. 

Add salt, pepper and nutmeg to taste.

6. 

Whisk in Parmesan if using.
