| 1 | can | Tomatoes, Diced | 14-16 oz. with juice |
| 2 | cups | Rice, White | cooked |

Saute the celery, onion, and peppers in the oil till tender.
Add the tomatoes and bring to a simmer
Add rice, mix, adjust seasoning, and allow to rest for 10 minutes.
