1/4cupOnion diced
1/4cupPepper, Bell diced
2tablespoonOil, Olive  
33/100cupPepper, Ancho fine dice
1canTomatoes, Diced 14-16 oz. with juice
2cupsRice, White cooked

Instructions

1. 

Saute the celery, onion, and peppers in the oil till tender.

2. 

Add the tomatoes and bring to a simmer

3. 

Add rice, mix, adjust seasoning, and allow to rest for 10 minutes.
