Ingredients

To inoculate the starter
4tablespoonCorn Meal 
2tablespoonSugar 
1 1/2teaspoonSalt 
1cupMilk 
To maintain the starter
3eachPotatoes medium
1quartsWater 
3tablespoonSugar 
2teaspoonSalt 

Instructions

1. 

Stir all of the To inoculate the starter ingredients in a saucepan and bring to scalding, stirring constantly.

2. 

Pour into a small bowl, cover very tightly, and leave in a warm place (about 90F) for 2 - 4 days, stirring daily. When it becomes light and bubbly, it's done.

3. 

Cook the potatoes in the water till tender. Reserve water, adding to it if necessary to reach 3 cups.

4. 

Rice potatoes, and add water, sugar, and salt.

5. 

Allow to cool to < 100F and add the results of the To inoculate the starter

6. 

When it becomes bubbly, stir. Allow to stand, covered, overnight.

7. 

Place in the refrigerator and allow to cure for 3 days. Always stir before using.

8. 

To Replenish:
Start at step 3 adding the remaining starter instead of the cornmeal solution.
