Ingredients

2/5poundsTomatoes, Grape sliced
1/5poundCucumber diced
9/50poundOnion, Red minced
9/50poundPepper, Bell yellor or orange, diced
1eachMangos diced
1/2cupCilantro minced
1eachLemon  juice only
1eachLime Juice only
1eachOranges Juice only
1/2eachPepper, Poblano Chile fine dice

Instructions

1. 

Slice the tomatoes sideways.

2. 

Finely dice the bell pepper.

3. 

Dice the remaining vegetables and the mango to a similar size.

4. 

Mix all the ingredients in a bowl. Adjust seasoning with salt and sugar.Cover and chill.

NOTE: The poblano chili is optional. Add more or less to your taste. I have a very low tolerance for chili and my recipes reflect that. This can be seasoned to your tastes.
