Mix the water, yeast, honey, and salt together and let sit 5 minutes.
Combine the flours, oats and salt.
In a mixing bowl add the liquid ingredients to the dry and mix for approx. 10 minutes.
Stretch the dough, form into a ball and allow to rise in a warm location for about 1 hour.
Fold the dough a few times and shape into a ball. Place ball into a floured banneton and alow to rise for another 30 minutes.
Preheat oven to 425F (220C) or 400F (205C) if in a convection oven. If using a Dutch Oven, place the DO into the oven now as it preheats.
Turn the dough out of the banneton (and onto the lid of the DO), baste the dough with the egg wash, and slash and bake for 35 minutes (if using a DO bake for 25 minutes and remove the top of the DO. Bake for another 10 minutes on lid of DO)
