Ingredients   

1eachCucumbersliced thin
1Mangospeeled and diced
1tablespoonButter 
1teaspoonSalt
3cupsCoconut Water
1 1/2cupsRice, Jasmine

Instructions

1. 

Assemble ingredients

2. 

Bring coconut water, butter, and salt to a boil.

3. 

Add rice and simmer at lowest possible temperature for 15 minutes

4. 

Mix in the mango and cucumber.

5.
