45 | gram | Cocoa | unsweetened
145 | gram | Sugar, Granulated
1 | pinch | Salt | ||
75 | gram | Water | boiling | |
1000 | grams | Milk | ||
60 | gram | Chocolate, Grated
3/4 | teaspoon | Vanilla Extract
120 | gram | Cream, Half And Half |
Combine the cocoa, sugar, and salt in a saucepan. Stir in the boiling water and bring mixture to a boil.
Stir for about 2 minutes. Add milk and heat, but don't bring to a boil. Stir in the chocolate until melted
Divide into serving portions and divide the half and half between them. This late addition brings the cocoa down to drinking temperature.
Remove from the heat and stir in the vanilla.

Everyone thought the recipe was too rich, so I increased the milk from 800g to 1000g and reduced the sugar from 165g to 145g on 2/15/19
